In celebration of the Singapore team’s recent win at the World Pastry Cup, also known as Coupe du Monde de la Patisserie, held in Lyon, France,Specialty Pastry Chef Desmond Lee, who shone on the national team, showcases a myriad of his delectable creations at Axis Bar and Lounge.
The afternoon tea menu begins with a refreshing osmanthus ‘kuei hua’ tea jelly with honey espuma, followed by a savoury trio of smoked turkey and cheddar wrap with mandarin orange aioli, lemonade cream cheese canapé and blue swimmer crab salad with mango ikura salsa. The extravagant experience continues with a third course of canapés, featuring Parma ham and mozzarella cheese, salmon and dill mousse on wholemeal toast, roasted chicken truffle mayonnaise stuffed in mini pita and passion cream cheese sandwich with caramelised walnuts.
Enjoy classic Madagascar vanilla scones and cherry blossom scones, paired with a selection of TWG gourmet teas, as well as braised beef pie and potato, truffle and leek quiche through the fourth course.
Taking centre stage is the last course, an exquisite three-tiered stand of desserts, which reflects the creativity of the award-winning pastry team at Mandarin Oriental, Singapore, as Chef Desmond cleverly infuses tea flavours to put together sweet and wholesome treats.Decadent delights include the brilliant rose saint honoré that is elegantly presented in the shape of a rose petal and highlighted during the competition. Other aromatic treats include Mandarin Oriental tea gâteaux, Earl Grey manjari sable, jasmine lemon plantation, oolong pear tart and mocha eclair.
