Perfectly timed for the coming high season in Thailand, The Beach House at Santiburi Beach Resort and Spa held its official launch party on 29 November with invited guests and members of the press treated to a five course feast of fresh local seafood and succulent meats prepared by Thailand’s celebrated culinary wizard, Chef Art.
One of the pioneers of the popular Chef’s Table concept in Bangkok; Chef Art is culinary consultant for Boon Rawd Brewery and he was brought in to create a series of unique dishes for at The Beach House for lovers of fresh seafood and choice cuts of meat – a perfect combination for the restaurant’s stunning beachfront location.
“My concept for The Beach House is to offer a new take on surf ‘n’ turf. I incorporate the restaurant’s high-temperature wood-fired oven to bring out the rich essences of the seafood and meats. I sous-vide the meat or slow poach the lobster, then finish it off in the oven to add extra flavour and aroma to the dishes,” says Chef Art.
This simple yet sophisticated approach to the cuisine is beautifully reflected in the restaurant’s design, which is largely open-air and features natural wood decking, a fresh seafood display area and a show kitchen area where the chefs sometimes put the final touches to the dishes before friendly, efficient staff serve them to table. Many of the ingredients are sourced locally, including tasty fresh herbs like rosemary and thyme, and Chef Art creates his own sauces and foams to add to the pleasures on the plate.
“The menu will change every three months and I will keep introducing new ideas,” explains Chef Art. “I like to experiment with new flavours and ingredients. I use passion fruit a lot for dressings and I have also made pesto with local kale instead of basil, but the main concept of preparing fresh, tasty dishes using locally sourced ingredients will stay the same.”
The sophisticated but laid back ambience and elegant palm-shaded surroundings at The Beach House certainly provide the perfect setting for relaxed culinary adventures. A subtle and stylish nautical theme runs through the furnishings and staff uniforms, and the luxury resort’s mature beachside gardens lend a soothing natural ambience.
