Celebrate Australia Day with a dining experience full of homegrown flavours and ingredients at Pei Modern restaurant in Sydney.Executive Chef Mark Best and Head Chef Joachim Borenius have selected their favourite dishes from the menu, which together make a great three-course meal to enjoy on the country’s national day.
Entrée – Ewan McAsh Signature Rock Oysters
Fresh local oysters (AUD 4 each) sourced from oyster farmer Ewan McAsh on the Clyde River on the NSW South Coast. Order a dozen on Australia Day and enjoy two complimentary glasses of Australian sparkling wine.
Lunch Main – Lamb Saganaki Burger, House Pickles, Vadouvan Onion Rings
Arguably the best burger in town, Pei Modern’s juicy lamb burger (AUD 32) is an Australia Day winner, with butter lettuce, aioli and fermented white cabbage, house pickles and onion rings on the side.
Dinner Main – 1.2 Kilogram Milly Hill Lamb Shoulder
Designed to share, Pei Modern’s signature 1.2 kilogram Milly Hill lamb (AUD 75) is sourced from the family sheep farm of Sally and Peter Strelitz in Armidale, NSW. It’s braised in yellow miso and served with bourbon apricots, wilted native saltbush and toasted almonds.
Dessert – Milk Chocolate Sorbet, Orange Jam and Anzac Biscuit
Finish the day on a (sugar) high with Pei Modern’s creamy milk chocolate sorbet (AUD 16), with a tangy orange jam and a house-made Anzac biscuit.
