This year, Chinese Executive Chef Chan Yan Tak put a healthy spin on traditional puddings when creating the yam bean pudding with conpoy and dried seafood. Yam bean, also known as jicama, is a rising super food that is high in dietary fibre and vitamin C. To the yam bean base, Chef Tak adds dried shrimp and fish to replace the usual preserved meat. For a bit of guilt-free luxury, Chef Tak includes a few lavish ingredients such as abalone, dried scallop and mushrooms, giving the pudding a wonderfully toothsome texture.
