As Four Seasons Hotel Houston gets ready for its close up later this fall when its multi-million dollar renovation is complete, Quattro is starting the celebration early with an inspired new menu that will have guests, foodies and critics buzzing when they rediscover the innovative downtown restaurant. Back from an extended summer vacation in his native Italy, Executive Chef Maurizio Ferrarese returns to his Houston kitchen with Italy very much on the mind and palate.
Known as the ultimate spot for power breakfasts and quick lunches for the city’s professional set, Quattro also boasts a new dinner menu that is teeming with decadent antipasti, pasta, pizza and secondi. Antipasti selections include inventive crudo (“raw” in Italian) options, while pasta offerings feature Chef Maurizio’s award-winning risottos and lasagna.
Decidedly delicious highlights on Quattro’s new dinner menu include: Italian-style poke, dentice (Gulf wild snapper), veal Milanese, rack of lamb, hickory smoked tartare, and his father’s favourite recipe, English peas with tomatoes and a soft egg. With this new menu, Chef Maurizio is embracing the time-honoured traditions of Italian-style cooking while continuing to innovate an ingredient-driven menu that focuses on locall- sourced cuisine.
“My trip to Italy was such an immersive and educational experience that reminded me why I love being in the kitchen in the first place,” Chef Maurizio exclaims. “With the aromas and flavours of my mother country still fresh on my mind, I have a strong desire to present this new menu, and will continue to bring authentic Italian food to the table on a daily basis.”
