Explore the exquisite flavours of Shanghai at Cherry Garden this July, as Guest Chef Charles Feng from Mandarin Oriental Pudong, Shanghai, showcases his culinary finesse.A popular style of Chinese cooking, Shanghai cuisine employs complex and advanced techniques which have been heavily influenced by the surrounding provinces, Jiangsu and Zhejiang. This much-loved cuisine emphasises aromas, tastes and colourful presentation of the dishes, highlighting the quality of ingredients and use of seasonings.
Chef Feng features a variety of irresistible dishes, starting with the chilled appetisers marinated jellyfish with scallion oil and marinated chicken with aged yellow wine. Take delight in his signature minced cod fillet soup with black fungus and mung bean vermicelli for a hearty indulgence, followed by the braised pork and eight-head abalone, coated in savoury soy sauce.
The menu also includes sautéed river shrimp with snap peas; citrus-glazed fish fillet with roasted pine nuts, a tantalising mixture of rich and earthy flavours accentuated by the pine nuts, as well as the delectable combination of crisp Chinese pak choy stuffed with shrimp mousse and bean curd.
Wrap up the gastronomic experience with the well-known stir-fried Shanghainese rice cake before enjoying a typical Shanghainese dessert, best represented in a bowl of Eight Treasures tea with glutinous rice dumplings.
