Now open, Chival is one of five restaurants and bars at La Ville Hotel & Suites CITY WALK, Dubai. Part of Autograph Collection Hotels, Marriott International’s exclusive portfolio of one-of-a kind independent hotels, this distinctive low rise property offers a unique and relaxed vibe amongst the metropolis of the city as the first hotel to grace Dubai’s new urban neighbourhood.
Chival offers a cosmopolitan and social setting where an extensive range of menus available all throughout the day reflect global artisanal cuisine and celebrate sustainability wherever possible, focusing on healthy and thoughtfully sourced products. The décor is light and airy, complete with an in-house bakery, herbal bar and outdoor seating area on the terrace.
Bright and breezy by day, Chival is a chic and cosmopolitan space where the design lends itself to casual social gatherings. Mornings are easy with the deep aroma of freshly ground coffee beans and baked pastries filling the air. A relaxing place to enjoy a late breakfast, light snack or lunch. Kick start your day with the a la carte breakfast menu featuring beef tartare served with poached organic eggs, acai and goji bowls, fresh pastries from the bakery and a selection of cheese and cold cuts. Refuel at lunch with 24hour cooked organic broths, poached salmon and Black Angus meatball power bowls, tuna tataki, kale and squash salad or a Caribbean fish sandwich.

Menus match the mood as the evenings become night and the restaurant transforms into a wonderful casual dining destination in the heart of CITY WALK Dubai. Leading characters on the dinner menu include Pulpo Gallego; smoked octopus, roasted potatoes, confit Vidalia onions, vegetable escabeche and Meso America Ceviche; seabass and shrimp, roasted tomato, poblano chili, fried corn and plantain crisps.

At the helm of the kitchen is chef David Schaumburger. Born in Zweibruecken, a small town in the southwest of Germany near the border of France, David is the son of a butcher and grew up in a household where the source ingredients of a meal were key. Surrounded by a fusion of German and French cooking styles throughout his childhood, David has an innate sense of ‘Savoir-Vivre’, a term coined to describe the French way of knowing how to live the good life. David began his career at Landschloss Fasanerie and has spent a tenure working at 2 Michelin star and 18 points Gault Millau restaurant Villa Rothschild alongside Executive Chef Christoph Rainer. He is passionate about pushing the boundaries of tradition and food trends, constantly experimenting with ingredients and flavours to create new and exciting dishes.
