Set on the edge of the brand new 50-metre (164 foot) long Infinity Lap Pool at the Resort’s private beach, CoCoRum enjoys stunning views of the Gulf of Siam and the lush green tropical hillside. At CoCoRum, guests can savour Thailand’s leading rum collection, an ever-growing list sourced from around the globe exclusively for Four Seasons Resort Koh Samui. Regularly scheduled tasting sessions are ideal for curious drinkers who want to go on a journey of discovery in the colourful world of fine rum. For the true connoisseur, CoCoRum’s unique Rum Club will present a bonus treat: contributing a bottle on the bar’s “wish list” unlocks access to a special collection of rare rums not available anywhere else in Thailand.
Working with Proof & Company, an award-winning bar and spirits team responsible for a number of the “World’s 50 Best Bars,” the CoCoRum cocktail menu is a work of art and exploration. The bar menu features fresh interpretations of classic rum cocktails, bringing to life nearly 300 years of rum-drinking tradition in the Caribbean and other parts of the world. All cocktails use slow-pressed juices, exotic house-made ingredients and select Thai flavours to surprise and delight the taste buds. With an emphasis on fine artisanal spirits and fresh local ingredients, each drink is handcrafted and presented with elegant and playful touches.
A colourful, wooden-board menu features specially hand-drawn illustrations. From the classic Daiquiri to recent innovations such as the Painkiller from the Soggy Dollar Bar and Zombie from Don The Beachcomber, every sip highlights another intriguing angle from the enigmatic world of rum.
CoCoRum also offers a small but artfully curated selection of fine wines, world beers and fresh-pressed tropical juices and other non-alcoholic drinks.
The tropical cocktails of CoCoRum are perfectly complemented by the food menu of indulgent Latin-American bites – it is the continent of rum after all – and as well as a selection of poolside international favourites. Peruvian ceviche of freshly caught white snapper, tiradito nikki with tuna, snapper with sesame glaze, and king crab causa with avocado and huancaina sauce inspire the palate. Meatier fare includes wagyu beef anticucho with chimichurri, and free range chicken anticucho or just some popcorn chicken to go with that long, cold beer.
Open for lunch and dinner from 10:00 am to 12:00 midnight, CoCoRum is much like the best of cocktails: a splash of colour, a dollop of flavour, a swirl of refinement and a touch of surprise, all blended together for a fabulous experience.
