Ashford Castle is delighted to announce the appointment of award-winning Chef Philippe Farineau as its new Executive Chef. Farineau joins the culinary team at the newly restored estate, bringing over 25 years of fine dining experience after working in some of the most renowned hotels and restaurants in Ireland and Europe.
A French native, Farineau describes himself as having “a French heart in love with Irish produce.” Commenting on the new role, he says: “Becoming Executive Chef of Ashford Castle is a wonderful opportunity for me and I am honoured to take up the reins at this time. I plan to take guests on a culinary journey of discovery between the land and sea and to redefine the old, classic recipes with some additional French flair.”
Working in collaboration with Beatrice Tollman, President and Founder of the Red Carnation Hotel Collection, Farineau also plans to introduce a brand-new potager, or kitchen garden, on the property grounds. This will provide the estate’s kitchens with the freshest herbs, fruits and vegetables and will be grown in the rich Connemara soil, some of the most fertile soil in Ireland.”We are delighted to welcome Philippe into the Ashford Castle fold,” says Niall Rochford, General Manager of Ashford Castle. “Philippe’s plans for the menu and food offering embrace the estate’s tradition of immersing guests in the local Connemara experience with a focus on local provenance and exquisite taste. This is a new chapter in Ashford Castle’s gastronomic history.”
Farineau’s appointment comes at a pivotal time in the history of the property, following the extensive two-year refurbishment program completed last month that introduced an impressive array of new additions and amenities to Ashford Castle, including a 32-seat movie theater, billiards room, cigar terrace and children’s games room.
