A newly implemented 6-course Signature Tasting Menu designed by Executive Italian Chef,Giuseppe Brancati, is now available at the contemporary yet stylish Italian restaurant, Alto 88 at Regal Hongkong Hotel. To showcase guests, who value top-notch Italian food, signature dishes of Alto 88; the Signature Tasting Menu provides a chance for diners to experience creativity and authenticity of Italian cuisine in one go.
Dishes on this extraordinary menu is made of the freshest ingredients from Italy particularly selected by Chef. Being the first to be presented for the dining experience, Sicilian Red Prawn and Seared Foie Gras is one of the most refreshing to be served. Using the freshest Sicilian Red Prawn with its sublime flavour and glorious natural colour, serving with slightly seared inspiring foie gras to perfect the dish. Risotto Acquerello, Cuttlefish, Black Ink is one of the highlights of the menu. Acquerello is considered as one of the world best superfine Carnaroli rice produced by the Rondolino family, who is renowned for its rice production. Its aging and refining process makes the rice texture and taste unlike others.
The black squid ink is with huge tons of seafood flavour and is absorbed by each piece of risotto rice, together with cuttlefish making the dish an unbeatable one. Roasted Beef Rump with 3 Kinds of Herb, Prune Sauce, Pumpkin and Ginger Quenelle, Horseradish Chips is a mixture of tastes. Sweetness of the prune sauce, pumpkin and ginger quenelle helps balance the strong flavour of roasted beef rump marinated with different herbs.Finally,Tuile Roll, Grand Marnier and Cinnamon Bavarois, Tangerine Reduction and Hazelnut Cream ends the evening perfectly with sweetness in harmony.
