Luxury Yusheng 

Toss in good fortune and welcome abundance with loved ones and business associates with Jiang-Nan Chun’s specialty Yu Sheng. Yu Sheng  is a festive raw fish salad that is tossed to symbolise abundance, success and vigour. Unique to Singapore and some parts of Asia, partake in this joyous activity with loved ones and business associates.


With last year’s outstanding reception to Jiang-Nan Chun’s luxury Yu Sheng, Chinese Executive Chef Alan Chan and his team once again craft a Yu Sheng masterpiece featuring a lively depiction of the Monkey God in commemoration of the Year of the Monkey. Made with edible ingredients including surf clams, salmon, rice in gold leaf, homemade plum sauce and passion fruit sauce, this masterpiece is enhanced with premium delicacies such as lobster, abalone and bird’s nest. To up the ante, this dish is also served with a vintage Dom Pérignon Champagne from Year of the Monkey 2004 (730 ml). With such an outstanding combination, this luxurious dish is a not-to-be-missed for large parties.


Yu Sheng


Welcome abundance and prosperity with the Hotel’s signature salmon Yu Sheng, a best-selling favourite that comes with more than 20 ingredients including salmon slices, crispy vermicelli, red beetroot, fried shredded yam, radish and tossed in homemade plum sauce, passion fruit sauce and pineapple paste with delectable crackers. Top-ups are also available with options such as poached Boston lobster at SGD 58 per plate. To provide more variety for diners, guests have the option to switch the raw fish for smoked salmon, crispy fish skin or deep fried silver fish. Raw fish option is only available for consumption in the Hotel premises.
