Four Seasons Hotel Seoul announces the appointment of Koo Kwok Fai as the new Chef de Cuisine of Yu Yuan, the Hotel’s Michelin-starred Chinese restaurant, where he will oversee and lead the culinary operations. After spending two years as executive chef at the two-Michelin-star restaurant Imperial Treasure in Shanghai, Chef Koo will begin his new venture in Seoul enriching the current menu at Yu Yuan with authentic Cantonese flavours and artful presentation.
A native Cantonese, Chef Koo is a seasoned chef with 27 years of experience working in various parts of Asia including Hong Kong, China and Singapore. He is an expert in the principles of Cantonese cuisine and cookery, creating exquisite dishes that highlight the freshness of each ingredient while demonstrating a spectrum of rich Cantonese flavours that stimulate the taste buds.
