Four Seasons Resort Mauritius Welcomes Chef Marco Garfagnini to the Indian Ocean

Marco Garfagnini, an internationally acclaimed Michelin-starred chef, will be taking over Acquapazza at Four Seasons Resort Mauritius for a six-month tenure.

Acquapazza by Marco will be Chef Marco’s atelier, where he will create a unique dining experience that offers simple and harmonious cuisine – a cooking-from-the-heart philosophy. During his tenure, the restaurant will offer a five or seven-course menu, with the option to add a tailored beverage pairing.

Born in the rural Tuscan town of Carrara, Chef Marco Garfagnini was always destined to cook. He discovered his passion for food in the family kitchen and then mastered his craft through trainings in Paris, London and New York. At 29 years old, Marco’s first restaurant in Carrara, Ristorante Ninan, was awarded a Michelin star. From then on, Marco’s talent and skills went from strength to strength, which led to him receiving a string of prestigious accolades. In 2011, Chef Marco led the way for ll Lago at Four Seasons Hotel des Bergues Geneva to its first Michelin star. In 2014, he moved to the French capital at Four Seasons George V, Paris, taking Le George’ss reins and curating a light and modern menu inspired by traditional Mediterranean cuisine. The result was a flavourful journey between Northern Italy and the French Riviera; a creative approach that was soon recognized with a Michelin star.

A cuisine stemming from enthusiasm, sincerity and creativity, Chef Marco’s menu at Acquapazza is a culinary voyage where he will share his signature specialties and new creations incuding Mustard Langoustine, Vitello Tonnato, Squid Risotto, Sea Urchin and Champagne, Deconstructed Parmigiana, Ravioli del Plin Guinea Fowl, and Veal Milanese. Desserts will feature classics with an avant-garde twist, with his revisited Tiramisù and the Cannolo Sicilliano. The highlight of this culinary journey is Chef Marco Garfagnini’s secret pasta recipe inspired by Japanese culinary techniques. The pasta is so thin that one can see through it and works like origami through his expert hands.
