Lanna Market Night Returns to Four Seasons Resort Chiang Mai

Khao by Four Seasons comes alive with fanfare and flair, bringing a fantastic Thai market experience to the comfort of the countryside retreat of Four Seasons Resort Chiang Mai. From local cuisine to crafts and cultural immersion, this promises to be a night to remember. “Guests will be treated to an authentic Thai street-market style dining experience,” shares Sous Chef Naruchit Taingtrong, who leads the culinary innovations at the Michelin Guide-recommended restaurant. “A Kad Mua is essentially a Lanna style street-market, and we are recreating that local ambience with typical busy counters, live music and lots of merriment,” he explains.

Farm Fresh

Chef Naruchit has a fondness for all things local and home-grown, and has travelled extensively to identify lesser known, but indigenous flavours. He enjoys working with a number of key ingredients that are unique to provincial Thai cooking. Among these are a local tamarind cultivar from Phetchabun province and a home-made, pure palm jaggery that is rarely found in markets today. “What separates authentic Thai food from what is easily available on the streets is that every ingredient plays a part in a dish,” he points out, “and the freshness of these ingredients is crucial to the final outcome.”

Dine Like a Local

Guests can expect wok-tossed, stir-fry stations, and salad counters churning out some spicy Esaan style cuisine such as Larb E-San Moo, which incorporates all the elements of a Northern Thai salad, such as roasted chili flakes and crunchy pounded rice to liven up this hand-tossed minced-pork salad.

A few of Naruchit’s Chiang Mai specials will be on offer too, including Khanom Sen Nam Ngiew, a fermented rice noodle with minced pork in a spicy tomato-based broth. Local delicacies include Khao Soi (crunchy noodles in a sweet and sour coconut-milk stew), a classic Som Tum Thai (raw papaya salad), and a variety of Nam Prik (fresh and fermented chili dips) to be paired with fresh vegetables and crisps.

Festive fare

Folk music is central to the carnival-like atmosphere at a Kad Mua, and at Khao by Four Seasons, a troupe of traditional performers will add revelry during the dinner. Local artisans plying their craft will complete the classic market feel, and bring the street-side sensation right up to the tables. “Guests may stroll through the ‘market’ and explore a variety of local handicrafts such as candle carving, soap carving, Lanna tung cutting,” says Naruchit. Performing exclusively for the occasion will be a troupe of expert Lanna dancers showcasing the Fon Khan Dok, a Buddhist ceremonial special. “We look forward to presenting a selection of exotic Northern Thai flavours from the streets in a festive atmosphere to ring in the New Year in true Northern Thai style!” he smiles.

Priced at THB 3,500++ per person (food only). Half price for children under 12 years of age and complimentary for children under 5 years.
