Pale Hall names Sam Griffiths as the new head chef

A confirmation has been declared by A North Wales Hotel that it welcomes a new head chef late this year. Sam Griffiths will take on the role at Pale Hall, Bala, by the end of the summer.


Welsh chef of the year in 2021, Sam is currently the executive sous chef in The Chester Governor’s restaurant Arkle, as well as overseeing the whole food and beverage operation.


General manager Debbie Cappadona stated that they are excited that Pale is entering a new phase of her culinary journey. They feel that Sam’s food is the perfect next step for our development, blending classic cooking with a lightness of touch to suit modern times.


Sam worked for seven years under Michelin – starred chef Simon Radley. It was him, Debbie added, who initially brought Sam to the hotel’s attention with a glowing recommendation.


Sam is replacing Gareth Stevenson, who has been the head chef at Pale Hall since its opening. They are grateful to Gareth for all he has done, and we wish him well in his next endeavor.
