Proof Debuts New Sous Chef, New Menus at Four Seasons Resort Scottsdale at Troon North

Experience the culinary creations of new Sous Chef Edgar Flores with the debut of expanded lunch and dinner menus at Proof, an American Canteen, at Four Seasons Resort Scottsdale at Troon North. Proof continues to feature live music every Sunday from 6:00 to 9:00 pm, as well as “Smokehouse Specials” every Friday through Sunday with featured cocktail pairings.

“Chef Flores brings extensive experience in the local marketplace to his new role at Proof, and a creative, elevated approach to the comfort food concept,” says Executive Chef Chuck Kazmer. “Guests and local visitors will still find their favourite Proof Pretzel Knots and signature items on the menu, along with new features highlighting local produce, seasonal ingredients and freshly smoked meats.”

Lunch will continue to feature classic handheld sandwiches, such as the reinvented Proof Burger with Chef Flores’ smoked tomato jam, and the addition of the market soup and sandwich combination, featuring seasonal touches and combinations. The menu expands on a selection of entrée salads using locally sourced vegetables and seasonal ingredients, along with housemade salad dressings including a new orange vanilla vinaigrette and smoked jalapeño caesar dressing.

The dinner menu draws upon the culinary talents of Flores and the signature Proof smoker. Highlights include Bourbon Glazed BBQ Ribs, Smoked Bone-In Texas Short Ribs and Achiote-Rubbed Smoked Half Chicken, all paired classically with a buttermilk drop biscuit, slaw and house pickles.

The menu is complemented by new cocktail offerings including the Proof Smoked Barrel Aged Old Fashioned, smoked tableside for a dramatic presentation. For a sweet finale, Executive Pastry Chef Yudith Bustos and her team have reimagined and elevated classics such as the S’mores and Proof ice-cream sundaes. New offerings also include the Bourbon and Chocolate experience, featuring a 10-layer chocolate cake, a smoking chocolate proof cigar and a shot of bourbon – all revealed under a cloud of smoke tableside.

Chef Flores comes to the property most recently from the Omni Montelucia Resort & Spa, where he worked in Prado restaurant and also in the banquet department. Flores has called Phoenix home for the majority of his life, and began cooking at an early age. As the second oldest of five children, his earliest experience was cooking for his siblings and helping his mother in the kitchen. This passion led to the pursuit of a career in the culinary arts. In Proof, Flores hopes to pay homage to his Mexican heritage by incorporating elements of his culture into the menu, while continuing to elevate and refine the classic American roadside concept.

Proof, an American canteen, serves up American home-style comfort food and beverages sourced exclusively from the 50 states. The décor of the restaurant draws upon the area’s history as a stagecoach hitching post and the frontier spirit of the Wild West, with a railroad track running through the dining room as well as vintage Edison-style lighting. Guests can take in the outdoors from every angle with walls that open to views of Pinnacle Peak and extensive patio dining. Proof is open daily for breakfast, lunch and dinner.
