Rio Hotel & Casino is preparing to alter the culinary scene with the introduction of the Canteen Food Hall, an innovative gastronomic destination due to open in January 2024. Taking over the former Carnival World Buffet location, this culinary hub promises a dynamic experience that combines first-to-market products with popular Las Vegas staples.
Trevor Scherrer, President and CEO of Rio Las Vegas, underlined the resort’s dedication to providing an accessible yet exhilarating eating destination reminiscent of the iconic Carnival World Buffet. The Canteen Food Hall will feature a selected mix of recognized classics and unique, first-to-market items, creating a dynamic venue where different flavors and approachable food collide.
The many restaurant concepts include:
Southland Burrito Co.: Chef Marco Herrera produces Sonoran-style burritos with a modern twist, paying homage to the culinary traditions of the Southwest, Baja, and Northern Mexico. The Tejano and Chicken Californio are two crowd-pleasers on the menu.
Shogun Ramen: Shogun Ramen, a collaboration between Master Ramen Chef Foo Kanegae and restauranteur Takashi Segawa, offers a distinct and growing array of nostalgic yet innovative ramen, and is Kanegae’s third restaurant in Las Vegas.
Tony Luke’s: The legendary South Philadelphia cheesesteak company, makes its West Coast premiere, bringing over 30 years of cheesesteak mastery and crave-worthy specialties like roast pig Italian and chicken cheesesteaks.
Tender Crush: Founded by Chris Barish and Julie Mulligan, Tender Crush offers a New York-inspired chicken concept with distinctive tastes such as Bird Pepper, White BBQ, and Sweet Sticky Chili.
Nama Nama: Located in the same building as Tekka Bar, Nama Nama transports diners to Tokyo’s streets with street food-style sushi that focuses on high-quality seafood and traditional Japanese flavors.
Attaboy Burger: Renowned Chef Alex Resnick launches Attaboy Burger, a new burger restaurant emphasizing a “less is more” attitude and presenting a short menu of four expertly prepared burgers. The Canteen Food Hall, which will open in January 2024, invites inhabitants and guests to embark on a culinary voyage. In the center of Las Vegas, enjoy a symphony of tastes and a vibrant dining setting.
