As one of Dubai’s original Italian restaurants, Splendido first opened in September 1998 and has since witnessed the tremendous growth and development of the JBR and Dubai Marina area, and has found itself in the center of one of Dubai’s most popular landmarks for visiting tourists and Dubai residents.

Keeping up with the developing trends of the Dubai restaurant scene, Splendido has been refreshed to bring a more chic ambience with understated details, while maintaining its hugely popular outside piazza. The restaurant has also welcomed new leadership under new Restaurant Manager, Andrea Scanu and Head Chef, Francesco Cavazzina collaborating to provide a more relaxed and instinctive experience with an invigorated collection of authentic dishes that stem from their home of Italy.

Andrea, originally from Torino in Italy, is an established Ritz-Carlton Gentleman who joins the team from The Ritz-Carlton Bahrain – having previously worked with their Italian restaurant Primavera, where he helped them win the Best Italian Restaurant in Bahrain two years in a row. Andrea is no stranger to the needs of refined guests, having the Bulgari Hotel in Milan under his belt. His presence at the Ritz Carlton, Dubai guarantees a warm welcome and intuitive service for all guests with extreme attention to detail and undeterred focus on ensuring that his team understands the importance of the authenticity of the Italian cuisine at Splendido. Chef Francesco, whose roots are from Chioggia, joins Andrea to ensure that Splendido remains as authentic as it guests expect.

Chef Francesco’s passion for food started at a young age, inspired by his grandmother and his mother – who would take pleasure in preparing intricate feasts for their visitors. Having attended culinary school in Venice and worked in Le Calandre, awarded the 16th best restaurant in the world in 2007 and 2008, Chef Francesco continued on a path to work alongside a number of world-renowned Michelin-starred chefs to learn from their techniques and unique pairings of ingredients.  In 2011, Chef Francesco joined the opening team for the Italian restaurant at the Armani Hotel in Dubai, before heading up the kitchen in L’Olivo Ristorante at the Rixos The Palm and, most recently, at The Artisan By Entoeca Pinchiorri in DIFC.

Chef Francesco brings with him a wealth of culinary experience and a familiarity to the unique Dubai market, while Andrea’s authentic Italian charm and warmth bring them together in an ideal partnership for the next generation in the legacy of Splendido at The Ritz-Carlton Dubai.
