To Celebrate This Year’s Festive Season, Four Seasons Hotel George V, Paris Unveils a Yule Log Imagined By Pastry Chef Michale Bartocetti

To celebrate the festive season, Michael Bartocetti, Executive Pastry chef of Four Seasons Hotel George V, Paris, has created an elegant and sophisticated Yule log to share with family and loved ones. Its soft, shallow curves and undulating design recall the shape of a traditional Christmas tree.

Keen to promote local producers, the chef selected a chocolate maker in the Ile-de-France region to provide him with sinfully delicious chocolate for his festive creation. He chose Nicolas Berger, a premier cocoa roaster and chocolatier renowned for producing exquisite artisanal chocolate.

Decadently elegant with an airy composition, the log features ingredients that complement one another perfectly. At its heart are five indulgent layers with complementary aromas and textures that tantalise the senses.

The first bite immediately awakens the palate, revealing the subtle sour and lactic notes of gwell, fermented milk from Brittany that the chef has infused with espelette pepper. Delicately balanced, the log’s chocolate crémeux made with 40 percent Peruvian chocolate adds a rich and crunchy note that is enhanced by the intense and fruity aromas of jalapeno peppers.

The chef’s indulgent creation has a mouth-watering fondant praline with pecan nuts and sobacha, offering deep comforting flavours. Adding to the carefully thought-out combination of textures is a chocolate croustillant with a delicate buckwheat flour roasted biscuit topped with kasha and fleur de sel, lending a crunch and sophisticated edge to this typically sweet dessert.

Binding all the flavours together is a rich chocolate mousse made with 65 percent dark Peruvian chocolate, bringing notes of grilled dried fruits and subtle tones of espelette pepper to the palate. The decadent mousse lies at the heart of the exquisite ganache that adorns the log and gives the creation a lustrous shimmer.
