Caravela, derived from the type of sailing ship that allowed groundbreaking travel for four hundred years between the 14th and 17th centuries, is an exclusive dinner concept for up to twelve people at once.

The Atlantic Voyage of 1487: Exploring Culinary History

The inaugural menu, The Atlantic Voyage of 1487, traces the journey of early explorers from Iberia along the African coast toward the Cape of Storms. Guests begin with First Light of the Atlantic, featuring crispy King Crab fritters with ikura and lime-yuzu vinaigrette, followed by Winds of the Cantabrian Sea, a torched Maldivian tuna loin accented with escabeche and Moroccan spices. Crossing the Madeira Currents serves local job fish with confit plantain purée and prawn coral tuile, while a green apple sorbet inspired by Wambugu Apples cleanses the palate.

The main course, Benguela Shores at Dusk, presents 12-hour sous vide pork belly glazed with smoky chili and Spanish chorizo jus, and the journey concludes with Triumphant Return to the Iberian Coast, an olive oil cake with port wine and blood orange gel encased in a sugar sphere inspired by the Armillary Sphere, symbolizing navigation. Petit fours, including caramelized torrija, coffee chocolate bonbon, and South African milk tart, complete the evening, evoking the voyages that discovered the Americas.
