Crossing the Madeira Currents serves local job fish with confit plantain purée and prawn coral tuile, while a green apple sorbet inspired by Wambugu Apples cleanses the palate.

The main course, Benguela Shores at Dusk, presents 12-hour sous vide pork belly glazed with smoky chili and Spanish chorizo jus, and the journey concludes with Triumphant Return to the Iberian Coast, an olive oil cake with port wine and blood orange gel encased in a sugar sphere inspired by the Armillary Sphere, symbolizing navigation.
