On the 2nd and 3rd of February, 2024, Alto Restaurant & Bar at the Four Seasons Hotel Jakarta was the scene of a sumptuous Italian culinary event. This unforgettable four-hands dinner was a collaboration showcasing the pinnacle of Italian gastronomy, featuring Executive Pastry Chef Mattia Casabianca from Uliassi, a Michelin 3-star establishment in Italy, and Executive Chef Marco Violano from Alto, the acclaimed Italian venue at Four Seasons Hotel Jakarta.

During this elegant affair, guests were treated to the epitome of Italian culinary excellence, experiencing the unique talents of two top-tier chefs. Alto’s breathtaking city views and its striking red decor provided an ideal backdrop for an evening of exquisite dining.

A Memorable Four-Hands Dinner

The evening was an indulgent celebration, where guests enjoyed a selection of Italian dishes paired with superior local wines. Chefs Mattia and Marco masterfully combined traditional methods with modern creativity, crafting dishes with ingredients celebrated for their aphrodisiac qualities, captivating all who attended.

The dinner commenced with luxurious starters like Gold Dusted Potatoes with Truffle and Porcini, and Lobster Sabayon with Sevruga Caviar, leading into magnificent main courses including Pumpkin Tortelli and Chicken Crumble, Sea Bass with Caponata and Cherry Sauce, and Beef Tenderloin Rossini Style adorned with Fresh Black Truffle.

A refreshing dish of Chartreuse White Melon and Crystallized Mint Leaves preceded the traditional Sicilian dessert, La Cassata, and the exquisite Petit Four, embodying the phrase “dulcis in fundo” — saving the best for last — in a culinary masterpiece. The evening was rounded off with homemade Limoncello, epitomizing the essence of Italy.
