Blue Bay by Marcel Ravin reopens at Monte-Carlo Bay Hotel & Resort

Nestled in the heart of Monte-Carlo, Blue Bay, a renowned culinary jewel, is poised to reopen its doors in February 2024 after an extensive hiatus for renovations, following the prestigious acquisition of its second Michelin star. Chef Marcel Ravin, celebrated for his innovative blend of Caribbean and Mediterranean flavors, is set to unveil an unparalleled culinary adventure in the Principality with the reopening at the Monte-Carlo Bay Hotel & Resort.

The reopening introduces the exclusive ‘La Table de Marcel’ experience, complementing the 44-seat restaurant and the approximately 50-seat terrace overlooking the Mediterranean. ‘Marcel’s Table’ is an intimate setting with eight seats, promising a personalized and immersive culinary encounter. Here, guests can delve into a specially tailored menu crafted on the spot by Chef Ravin and his team before their very eyes.

The menu, refreshed every three weeks, underscores the team’s dedication to utilizing ingredients from the kitchen’s garden and encounters with local producers. Delights such as the “Œuf Monte-Carlo,” an organic egg infused with cassava, truffle, and passion fruit, showcase the culinary artistry. Timeless classics like ‘The Chocolate of My Childhood’ create a symphony of indulgence for the senses. The menu also features five cocktail variations, including “Marcel’s Rum” in collaboration with Rhum Clément, enhancing the experience of food and rum pairings.

Chef Ravin collaborated with the skilled interior designer Alexandra Saguet to revamp the restaurant terrace. Drawing inspiration from the five elements, the design resonates with the Chef’s cultural background and the wisdom inherited from his elders. Gifted the book ‘D’un Rocher à l’autre’ during their initial meeting, Saguet delved into Chef Ravin’s background, understanding the nature and origins of his cuisine. This insight allowed her to bring his vision for the restaurant to life.
