Wynn Las Vegas is delighted to announce the appointment of acclaimed chef Jeff Ramsey as the new executive chef of Mizumi, the resort’s renowned Japanese fine dining establishment. Boasting Michelin Star accolades and over twenty years of expertise in both traditional and innovative Japanese cuisine and sushi, Ramsey brings his inventive and modern techniques to enhance the dining experience at the recently revamped Mizumi.

Expressing his enthusiasm, Ramsey said, “I am thrilled to be part of such an exceptionally talented team and am eager to contribute to the legacy of Mizumi. Together, we will advance Mizumi’s offerings by refining guest favorites and introducing creative new dishes.”

Raised in the United States after being born in Japan, Ramsey’s culinary journey began as a dishwasher in a local Maryland restaurant in 1996. Over the years, he climbed the kitchen hierarchy to become a skilled sushi chef. Recognizing his passion for sushi, Ramsey journeyed to Japan to train under Masayoshi Kazato, the official Sushi Ambassador of Japan, earning the title of “Master of the Art of Sushi” from the All Japanese Sushi Association. Ramsey diversified his culinary education by studying under the renowned Spanish chef and restaurateur, José Andrés, where he further developed his bold and experimental style, temporarily veering from the world of sushi.

Ramsey’s culinary odyssey continued with stints at award-winning establishments in Japan, Thailand, Malaysia, and the United States. Serving as the executive chef of Tapas Molecular Bar at the Mandarin Oriental Tokyo, he garnered and maintained a Michelin Star from 2009 until his departure in 2011. Ramsey expanded his expertise as a consultant for various global pop-up restaurants before opening his inaugural restaurant, Babe, in 2015, where he served as owner, chef, and director. Adding restaurateur to his repertoire, he introduced the modern Japanese kaiseki and sushi omakase concept, Kintsugi by Jeff Ramsey, in 2019, earning recognition as a Michelin-selected restaurant in 2022 and 2023. Ramsey’s culinary prowess was further acknowledged in 2022 when he received the prestigious title of Winning Challenger Chef for Iron Chef Thailand.
