Building upon the success of their collaboration since February 2023, Cathay Pacific is pleased to continue their collaboration with Duddell’s, presenting a new selection of menus featuring authentic Cantonese delicacies, regional Chinese specialties, and refined classic comfort dishes. These delectable offerings are exclusively available to First and Business class passengers on designated long-haul flights departing from Hong Kong.

These latest menus are part of Cathay Pacific’s ongoing efforts to provide passengers with meticulously curated dining experiences in the air, achieved through collaborations with renowned local restaurants and brands, further underscoring the airline’s dedication to exceptional service.

Together, we aim to provide our customers with an unforgettable culinary experience centred around authentic local delights delivered with warm, attentive service.”

First Class:

Embark on a culinary journey fit for royalty in our First Class experience. Begin with a tantalizing appetizer of crystal pork terrine complemented by the rich flavors of aged Chinese black vinegar, a homage to the renowned dish from Zhenjiang, China. Delicately cured, boiled, and thinly sliced pork knuckle awaits, topped with a sweet and tangy sauce, setting the tone for an extraordinary dining experience.

Next, indulge in an array of exquisite main courses. Our sautéed abalone and chicken, infused with the piquant flavors of Sichuan pepper and accompanied by crispy greens, offers a modern twist on a classic Chiu Chow delicacy. For those craving a symphony of flavors, the steamed cod fillets adorned with Chinese ham and shiitake mushrooms promise a luxurious blend of textures and tastes.

Concluding this epicurean adventure is our black sesame tart paired with tofu ice cream, a delightful rendition of the beloved Chinese dessert. With nutty sesame mousse encased in a buttery crust and accompanied by velvety tofu ice cream, it’s a harmonious finale to a culinary masterpiece.

Business Class:

In Business Class, indulge in a gastronomic delight with dishes crafted to tantalize the senses. Kick off your journey with our Sichuan-style poached chicken, drizzled with sesame and chili sauce—a flavorful symphony that awakens the palate with its spicy, fresh, and fragrant notes.

For the main course, savor the succulent braised pork ribs glazed with hawthorn sauce and green apples—a sweet and tangy concoction that delights the taste buds with each tender bite. Alternatively, indulge in the hearty braised beef ribs simmered in port wine, offering a comforting embrace perfect for the winter season.

Complete your culinary voyage with a delightful serving of tofu pudding topped with red beans, a light and luscious dessert that brings a perfect closure to your dining experience. With silky smooth pudding and sweet azuki red beans, it’s a taste of pure indulgence.
