The Pavilion Restaurant at Caille Blanc Villa & Hotel, a luxurious boutique establishment nestled in Soufriere, St. Lucia, West Indies, has unveiled its exciting news today: the 2024 residency of Shorne Benjamin, a native of St. Lucia and an accomplished executive chef based in Brooklyn, New York. Starting from Sunday, April 21, 2024, coinciding with Saint Lucia’s Restaurant Week, Chef Shorne will introduce his “new age Caribbean” culinary delights exclusively to The Pavilion Restaurant’s daily lunch and dinner menus.

Chef Shorne, the visionary behind Fat Fowl, a popular eatery specializing in new age Caribbean cuisine situated in downtown Brooklyn, NY, has garnered national acclaim in the United States through features on renowned platforms such as the Today Show, the Tamron Hall Show, Ebony Magazine, and NBC New York. Rooted in his childhood memories of cooking alongside his grandmother in St. Lucia, Chef Shorne’s cuisine pays homage to traditional Caribbean flavors while infusing them with his distinctive “new age” flair.

Beyond crafting specialty dishes for the venue, Chef Shorne will also return to the island starting in April for his residency, where he plans to host a series of unique culinary experiences, each meticulously prepared and presented in his signature style.

This delectable offering will take center stage on the menu, and the chefs at The Pavilion will undergo specialized training to guarantee its consistent excellence throughout Chef Shorne’s residency. Together, Chef Shorne and The Pavilion Restaurant promise to whisk guests away on a culinary voyage, blending local flavors with international sophistication to create an unforgettable dining experience.
