Embarking on a historical journey, the artisans of Shai Salon present the newly unveiled HÉRITAGE Afternoon Tea. Under the guidance of Senior Executive Pastry Chef Nicolas Lambert and Chef Axel Godefroid, guests are invited to delve into the captivating origins of tea and coffee culture, tracing the intricate sea-and-land spice routes that once bridged the East and West.

Indonesia

The expedition commences in Indonesia with the Shrimp Peanut Sambal Sandwich, a flavorful creation where succulent prawns are embraced by peanut sauce, invigorated with zesty lemon juice, and infused with the aromatic essences of lemongrass and coriander. Following this savory introduction, the Sumatra Gayo Coffee and Mangosteen emerges as a sweet masterpiece, combining Sumatra Gayo Coffee Mousse, chocolate biscuit, and tropical mangosteen coulis to pay homage to Indonesia’s rich coffee heritage dating back to the 17th century.

India

Shai Salon’s exploration of India’s vibrant tea culture begins with the tantalizing Chicken Tikka Golgappa – a harmonious blend of succulent chicken tikka nestled within a crispy golgappa shell. This savory delight sets the stage for the Karak Tea and Nagpur Orange, a luscious brioche featuring Indian karak tea cream soaked in Nagpur orange marmalade, offering bold and comforting notes reminiscent of authentic Indian flavors.

France

As we approach France, the fragrance of iconic lavender fields envelops the air, signaling the beginning of Shai Salon’s sensory journey. The Egg and Bacon Éclair, a blend of creamy egg, crispy veal bacon, and truffle, provides a refined taste of French gastronomy. This savory delight leads into the French Lavender Tea and Figue de Solliès, a delicacy comprising lavender sablée, caramelized figs, lavender honey, and infused lavender tea mousse – a symphony of flavors inspired by the French lavender fields.

Italy

The journey culminates in Italy, where espresso reigns supreme. The enchanting Stracciatella with Tomato Consommé weaves vibrant flavors, transporting taste buds to the heart of Italian indulgence. Concluding the culinary voyage is the Italian Coffee and Vanilla Affogato, featuring fresh Italian espresso coffee, airy light vanilla mousse, and a luscious coffee sauce – a sweet finale to the exploration of Italy’s culinary treasures.

The Classics

Additional delicacies grace the menu, offering a perfect symphony of flavors. The Caramel and Sea Salt Brioche Feuilletée presents a freshly baked brioche feuilletée adorned with a luscious caramel and sea salt cream. The Pistachio and Orange Blossom Financier blends Iranian pistachio and orange blossom flavors, coated with pistachio white chocolate. The 66% Chocolate and Hazelnut Cookies, a timeless combination of chocolate and hazelnut with homemade Piedmont hazelnut praliné, and the Freshly Baked Plain Scones Paired with Homemade Jams complete the experience, adding diverse and satisfying layers to the culinary journey.
