Four Seasons Los Cabos Unveils Zest, Baja’s Most Exclusive Restaurant

Four Seasons Resort and Residences Los Cabos at Costa Palmas has introduced its 13th dining concept, Zest. This unique fine-dining restaurant is the smallest in Baja, featuring a single table that seats up to twelve guests. Executive Chef Fabio Quarta curates a nine-course seasonal tasting menu.

Zest is situated just outside the lemon groves near Limón, one of the resort’s signature restaurants, within Chef Fabio’s private garden. Guests dine under the stars at the lone table, surrounded by passion fruit vines, enjoying dishes made from the garden’s seasonal produce.

Chef Fabio, originally from Puglia, Italy, has traveled globally, from Europe to the Middle East, Africa, and finally, Baja’s East Cape. His culinary style reflects the fresh, seafood-forward, seasonal produce he grew up with.

Zest celebrates these culinary connections, blending fresh ingredients with techniques and flavors from Italy and Baja.

“Zest is an expression of my love for both Italian and Mexican cuisine culture,” says Fabio Quarta, Executive Chef at Four Seasons Resort and Residences Los Cabos at Costa Palmas. “It brings me great joy to share this passion with our guests in this incredibly intimate setting that encourages deep connection to the dining experience and those you are sharing it with.”

The inaugural menu includes:

• Salt Baked Beetroot Tartare: lemon ricotta, raspberry, beet gastrique, salmon ikura
• Heirloom Tomato: bluefin tuna otoro, serrano pepper, avocado cream
• Blackened Rainbow Carrots: cashew hummus, coriander seeds, cotija cheese, macha oil
• Roasted Tomato and Strawberry Gazpacho: vanilla, poached Baja shrimp
• Rigatoni Cacio e Pepe: smoked butter, bacon, chives, black truffle
• Bread Crusted Tuna Loin: charred tomato, kalamata olives, caper berries, herbs
• Charred New York Tagliata: garden arugula, shaved parmesan, rosemary chimichurri
• Lemon Sgroppino: vodka, prosecco, lemon sorbet
• Flamed Berries: mascarpone cream, Italian meringue

The exclusive dining experience is priced at MXN 6,500 (approximately USD 360) per person, with a special wine list curated by award-winning sommelier Victor Itza Pacheco available.

Zest offers one seating per night for up to 12 people at 7:00 pm, and operates seven days a week. Reservations open one month in advance and can be made by contacting the concierge.
