The restaurant was the final venue to open during the broader repositioning process, and its highest-level evening table service was introduced more recently. Collaboration with the resident culinary team has been described as instrumental in bringing the concepts together. As a result, technique, regional sourcing and restaurant-specific character have been combined without reducing either venue to a simple reinterpretation of traditional Mallorcan cooking for visiting diners.

MEL has been shaped as the resort’s most Mediterranean dining experience, while CERCLE has been centred on a gourmet aperitif concept supported by a curated wine and cocktail selection. Quiosc has continued to operate as the Pool Restaurant & Bar, giving the overall portfolio several clearly differentiated settings.

Across these venues, menu development, supplier integration, new dishes and creative direction have been introduced gradually. The process has been aligned with the staged launch of each dining concept rather than being presented as a single change. Within that framework, fine dining has been connected with regional produce, local expertise and the traditions of Spain’s Mallorca.
