Anticipate a taste adventure that harks back to the legendary Spice Trade period of Indonesia, led by the talented Bar Manager Julian Brigget. With his notable background from Bar Trigona at the Four Seasons Hotel Kuala Lumpur, Brigget spearheads the debut of Nautilus Bar’s innovative menu, promising a thrilling new exploration in mixology.

Julian Brigget shares, “Our aim was to shift our focus towards utilizing indigenous spices and embracing the maritime essence of the Spice Trade period. Expect timeless favorites reimagined with a touch of nostalgia, alongside distinctive concoctions that merge top-notch spirits with contemporary mixing techniques.”

Unveiling the New Spice Trade Menu

Between the 17th and 19th centuries, the historic port of Sunda Kelapa in Jakarta was a pivotal center for the international spice trade, with spices from the Thousand Islands spreading their unique scents and tastes across the globe.

Drawing inspiration from this illustrious era, Nautilus Bar puts a spotlight on locally sourced spices with its new menu, launching on February 21. Delve into a selection of 16 novel cocktails, each highlighting the essence of four Indonesian spices: Pepper, Pandan, Cinnamon, and Nutmeg.

Experience Indonesia from a new perspective, where these enticing spices are enhanced through creative methods, intriguing flavor combinations, and celebrated spirits. Both locals and visitors will embark on a sensory journey that connects the historical and the contemporary.

Discover four unique cocktails dedicated to each spice category. For those seeking a more subdued or non-alcoholic option, the menu also includes low-ABV drinks and mocktails.

Additionally, guests can explore an assortment of Negroni variations, enjoy fine wines by the glass, and peruse a vast collection of spirits from across the globe.

An enticing selection of gourmet bar snacks complements the beverage offerings, with options ranging from Sate Lilit Bali and XO Beef Sliders to Gyukatsu Sando.
