New Green Pearls partner: The Birkenhof Spa & Genussresort unveils serene collaboration

We’re delighted to announce the inclusion of the Birkenhof Genussresort & Spa and its renowned restaurant, “Eisvogel,” into our network this year. This addition not only enhances our collection of sustainable 5-star hotels but also brings a distinguished 2-star restaurant into our fold.

The Birkenhof * Spa & Genussresort stands as a beacon of sustainability in the heart of the Upper Palatinate Lake District. Nestled in nature, the resort is dedicated to preserving the unique landscape for future generations. The commitment to environmental stewardship is evident across various facets, from producing electricity through solar panels, wood gasifiers, and combined heat and power units to adopting a zero-waste philosophy. The resort also promotes biodiversity through features like a natural swimming pond and lush plantings.

At the Birkenhof * Spa & Genussresort, guests are treated to a haven of wellness and culinary excellence. Many visitors are drawn to the 2-star “Eisvogel” restaurant, a culinary gem crafted by senior manager Hubert Obendorfer. Despite the challenges of the recent years, the restaurant’s management has seamlessly transitioned to his son, Sebastian Obendorfer, who has admirably retained and even enhanced its two Michelin stars.

Sebastian’s culinary philosophy revolves around creating extraordinary dishes using locally sourced, down-to-earth (organic) ingredients from the Bavarian region. Employing inventive combinations and a constant stream of fresh ideas, he pays meticulous attention to the texture of his creations, akin to the principles of molecular cuisine. An example of his regional mastery is the char with fennel, raspberries, and verbena.
