This gourmet journey marries the excitement of a picturesque seaplane tour across New Orleans and Louisiana’s coastal wetlands with a deep dive into the world of oyster cultivation, culminating in a meal at the acclaimed Chemin à la Mer by James Beard Award-winning Chef Donald Link, showcasing his newest culinary venture.

Mali Carow, the General Manager at Four Seasons Hotel New Orleans, shares, “Our ‘Oysters Take Flight’ journey is a blend of education and adventure, highlighting our deep-rooted food culture and dedication to preserving our coastlines. It’s designed to tell the story behind our actions, especially the thoughtful approach behind the oyster selections at Chemin à la Mer.”

This exclusive adventure is offered on Mondays and Tuesdays, requiring reservations made at least two weeks in advance. It starts with a luxury ride from the hotel to the airstrip, where guests will take off on a seaplane journey showcasing breathtaking views from New Orleans to the Mississippi River’s entry into the Gulf of Mexico. The voyage leads to Little Moon Oyster Ranch, where attendees get an up-close look at the oyster cultivation process, from the early stages of growth to the point they’re ready for the dining table, all while absorbing knowledge about the coastal ecosystem and experiencing a vital part of the local culinary identity.

At the heart of this experience is the visit to Little Moon Oyster Ranch, run by Ryan Anderson, who grew up in the oyster farming industry in Maryland before bringing his expertise to Louisiana. The ranch practices innovative “off-bottom” farming in floating cages, nurturing over 100,000 oysters that boast distinct flavors. This part of the experience not only educates guests on sustainable aquaculture but also offers the unmatched joy of tasting oysters directly from the sea.

“Oysters Take Flight” is a comprehensive journey that showcases the rich biodiversity, culture, and traditions of the area. Participants will delve into the importance of coastal ecology, encounter the region’s unique cultures, and learn about vital conservation efforts safeguarding the Mississippi River delta. The adventure concludes back at the Four Seasons Hotel New Orleans with a curated tasting menu at Donald Link’s tribute to Gulf Coast cuisine, Chemin à la Mer.
