Antoine Capelli’s career spans several continents, having worked in both luxury hotels and fine dining establishments across Europe and Asia. He began his career in Switzerland, managing his family’s restaurant before expanding his horizons internationally. Over the years, Capelli has developed a deep understanding of both kitchen and front-of-house operations, which has contributed to his remarkable career. His ability to balance the needs of guests with operational efficiency has been a defining feature of his work.
In Singapore, Capelli has earned a solid reputation for his work at notable establishments, including Marina Bay Sands, where he managed Daniel Boulud’s db Bistro & Oyster Bar. His extensive experience also includes senior leadership roles at Raffles Hotel Singapore, The Lo & Behold Group and InterContinental Singapore Robertson Quay. Most recently, Capelli served as the Director of Food & Beverage at Mama Shelter before joining Pan Pacific Orchard. His vast portfolio includes leadership positions at Michelin-starred and award-winning restaurants such as béni Singapore, making him a highly respected figure in the local hospitality scene. His deep industry knowledge and leadership in F&B operations have helped set new benchmarks in the city’s luxury dining sector.

This includes Mediterranean dining at Mosella, Pacific Breeze at the Forest Terrace offering a blend of local and international favourites and Aqua Bar at the Beach Terrace with its resort-like atmosphere. He will also lead the culinary experience at Florette at the Garden Terrace, in-room dining services, the Chairman’s Lounge for private dining and banquets at the Claymore Ballroom, the hotel’s largest pillarless ballroom. In his new role, Capelli will play a key role in enhancing the hotel’s culinary identity, with a focus on creating memorable experiences for guests, ensuring every meal is a special occasion.
