Her understanding of local ingredients and regional recipes helped create a menu that reflected the destination’s identity. Instead of merging both styles into one approach, the collaboration allowed each chef’s individual perspective to remain visible throughout the dining experience.

The selection included Mee Krob with crispy vermicelli noodles, pomelo and chilli; Sago Miang Kham with peanuts, dried shrimp, shallots and ginger; Koi Koi featuring hamachi, bird’s eye chilli, Nan pepper, horse coriander and Royal Project cucumber; and Tom Yum Seafood Croquette prepared with sweet potato, river prawn, squid and Thai herbs.

The menu continued with Goong Mung Gorn, featuring Phuket lobster paired with palm heart and a sauce inspired by Nam Jim Seafood, Thailand’s well-known spicy and tangy seafood dip.

Khanom Jeen Chow Wang brought influences from palace cuisine, combining a freshly prepared kingfish ball with Hokkaido scallop, caviar, pineapple and smooth coconut cream.

Tom Kati Pla Kao focused on freshness, featuring grouper from the day’s catch with coconut, turmeric and lime leaf. A Torch Ginger Flower Sorbet followed, introducing flavours inspired by Dok Dala, a flower widely used in Southern Thai cuisine.

The main course featured Sichon Angus Beef Fillet from Nakhon Si Thammarat. The beef was prepared with fresh turmeric and Pattani sweet flower salt before being served alongside an ancient-style khi lek curry and an Andaman jasmine rice pot pie.

Dessert continued the celebration of Thai heritage through Four Suns, Eight Rains, a creation inspired by a Southern Thai expression describing seasonal patterns in the region. The dessert represented Thailand’s annual cycle through local ingredients and traditional influences.
