Dorchester Collection has appointed Tristan Delaittre as General Manager of Hotel Eden in Rome, effective 1 October 2026, bringing an experienced luxury hospitality executive into the leadership of one of the Italian capital’s established luxury hotels.

Delaittre takes on the new role after more than seven years with Dorchester Collection, during which he has held senior food and beverage positions and contributed to the group’s wider commercial and operational strategy.

Most recently, he served as Corporate Director of Food and Beverage, overseeing food and beverage strategy across the Dorchester Collection portfolio while also contributing to the development of future hotel openings in Dubai and Tokyo.

His appointment comes as Rome continues to strengthen its position as a major European luxury destination, with Hotel Eden remaining an important address within the city’s high-end hospitality landscape.

Tristan Delaittre Takes Over Hotel Eden Leadership

As General Manager, Delaittre will lead Hotel Eden, bringing extensive experience in luxury hotel food and beverage operations together with a broader understanding of portfolio-level hospitality strategy.

His career within Dorchester Collection has provided exposure to some of the company’s most prestigious properties and operating environments. Delaittre has spent more than seven years with Dorchester Collection, building his career within the luxury hospitality group.

His most recent position as Corporate Director of Food and Beverage involved overseeing strategy across the collection’s hotels. The role extended beyond individual property operations, requiring a broader perspective on food and beverage performance and development.

He also contributed to the planning and development of future Dorchester Collection openings in Dubai and Tokyo, providing exposure to the group’s international expansion and the complexities involved in developing luxury hospitality concepts in new markets.

Previous Leadership at Le Meurice in Paris

Before becoming Corporate Director of Food and Beverage, Delaittre served as Food and Beverage Director at Le Meurice in Paris.

In that role, he was responsible for the hotel’s restaurants, bars, events and in-room dining operations.
