Dorchester Collection has appointed Tristan Delaittre as General Manager of Hotel Eden in Rome, effective 1 October 2026, bringing an experienced luxury hospitality executive into the leadership of one of the Italian capital’s established luxury hotels.
Delaittre takes on the new role after more than seven years with Dorchester Collection, during which he has held senior food and beverage positions and contributed to the group’s wider commercial and operational strategy.

Most recently, he served as Corporate Director of Food and Beverage, overseeing food and beverage strategy across the Dorchester Collection portfolio while also contributing to the development of future hotel openings in Dubai and Tokyo.

Before becoming Corporate Director of Food and Beverage, Delaittre served as Food and Beverage Director at Le Meurice in Paris.
In that role, he was responsible for the hotel’s restaurants, bars, events and in-room dining operations.
The position provided direct oversight of multiple guest-facing food and beverage functions within a luxury hotel environment. It also strengthened his experience in managing culinary operations, events and service delivery at a high-end property.
Le Meurice is part of the Dorchester Collection portfolio, making Delaittre’s progression to Hotel Eden another example of the group developing senior leadership talent internally.
