What we bring to it is our way of looking at ingredients: a fiddlehead fern foraged this monsoon, a pineapple from Manipur, a plum from Kashmir finding its way into the payasam. It’s our team from Kerala who keep this menu honest, and it’s India’s seasonality that quietly shapes it every year.”

Completing the savoury selection are Pazham and crisp Pappadam, served alongside the centrepiece of the Sadya experience: a generous serving of Matta red rice. The rice becomes the perfect foundation for the next stage of the feast, with guests enjoying the rich combination of Parippu, homemade ghee, Pineapple Rasam and Sambhar.

The meal concludes on a sweet and memorable note with a seasonal Kashmiri plum Payasam, offering a delicate finish to a celebration built around tradition, warmth and togetherness.
