Andrew Whiteside has been appointed as the Executive Chef at Four Seasons Resort Scottsdale at Troon North. With extensive experience in food and beverage leadership, Whiteside will oversee all culinary operations, including the renowned restaurant outlets Talavera Spanish steakhouse and Proof, an American Canteen, in Scottsdale.

“Andrew’s extensive culinary expertise, combined with his passion for supporting sustainability and local artisans, is a perfect fit for our property,” says Director of Food and Beverage Rita Vale. “We are excited to welcome Andrew to our home in the Sonoran Desert and to the Four Seasons Resort Scottsdale family.”

Whiteside previously served as the Executive Sous Chef at Four Seasons Hotel San Francisco, where he supported the food and beverage operations for the 272-room property. Collaborating with the Chef de Cuisine, he enhanced the a la carte offerings at MKT Restaurant and implemented new food and beverage options and seasonal menu changes.

Before his time in San Francisco, Whiteside worked at Four Seasons Hotel Palo Alto in Silicon Valley, where he revamped Quattro restaurant and launched a new food truck activation. His career with Four Seasons began at Four Seasons Resort Maui at Wailea, where he managed two specialty restaurants and established partnerships with local farmers and specialty suppliers.

Whiteside started his hospitality journey with Fairmont Hotels & Resorts, gaining diverse experience at locations such as the Fairmont Olympic, Southampton, and Jasper Park Lodge. His early experiences in independent restaurants helped him develop foundational culinary and leadership skills.

“I make it a priority to learn something new every day, and love creating and nurturing partnerships with independent farmers and local growers,” says Whiteside. “I am passionate about immersing myself in a destination, and drawing inspiration to create menus unique to each respective place I am fortunate to live and work.”

Whiteside graduated among the top three in his culinary program at Conestoga College in Waterloo, Ontario, a program that has grown significantly in size and reputation since then. He then joined the Ministry of Ontario’s Culinary Apprenticeship program, completing two years of apprenticeship under renowned Chef Michael Blackie. After logging 6,000 training hours, Whiteside passed his Red Seal exam, qualifying him to train his own apprentices. He was honored as an Alumni of Distinction in 2023.

In his free time, Whiteside loves to travel, immersing himself in new cuisines and cultures. His recent trips to Southeast Asia and Spain have been particularly inspiring. An avid sports fan, he is eager to enjoy Scottsdale’s sunny weather. Whiteside also enjoys cooking with fresh finds from the farmer’s market and is excited to explore Arizona’s local vendors.
