Master Chef Leung Wing Cheung has enchanted food aficionados with his refined and understated cooking style, embodying his deep grasp of Chinese gastronomy. With over forty years of culinary excellence in Hong Kong and Singapore, Chef Leung has recently joined Pan Pacific Orchard as the head Chinese Master Chef. At The Chairman’s Lounge, he aims to introduce extraordinary dishes unique to this innovative private dining concept, aspiring to make it a top gourmet destination in the city. Moreover, as the overseer of the hotel’s Chinese banquet kitchen, Chef Leung broadens his reach, offering his elegant twist on traditional Chinese recipes to a wider audience.

Chef Leung reflects, “My approach to cooking deeply honors the foundational elements of Chinese cuisine, aiming to reveal the distinct qualities of each dish to my patrons. Chef Leung’s gastronomic odyssey began in the 1960s and 70s in Hong Kong, learning under experienced restaurant chefs. His relocation to Singapore approximately three decades ago was a significant career milestone, positioning him among the pioneering group of Hong Kong chefs who influenced Singapore’s food scene. His 12-year role as the Executive Cantonese Chef at Si Chuan Dou Hua, PARKROYAL on Kitchener Road – part of the Pan Pacific Hotels Group – further solidified his reputation in the culinary sphere.

Throughout his distinguished career, Chef Leung has honed his craft in several renowned Chinese fine dining venues, such as the Tung Lok Restaurant Group, Li Bai Chinese Restaurant at Sheraton Towers Singapore, and Summer Palace at the erstwhile Regent Hotel. His journey exemplifies his unmatched skill and passion, and his dedication to Chinese culinary arts.

Joining Si Chuan Dou Hua restaurant in 2009, Chef Leung showcased his culinary finesse by perfectly blending his expertise in Cantonese cuisine with the bold, innovative flavors of Sichuan cooking. The hallmark of Leung’s cooking is his ability to enhance the natural tastes of high-quality ingredients with minimal seasoning, a cornerstone of Cantonese culinary art.

His skill in combining the subtle aspects of various Chinese regional cuisines has led to a collection of sophisticated dishes that have earned widespread praise. Among his signature offerings at Pan Pacific Orchard are his selection of double-boiled soups, demonstrating the traditional ‘san bao liu dun’ (三煲六炖) techniques, the visually captivating Exotic Garden Yusheng with Osmanthus and Black Truffle Sauce, a festive treat reimagined for year-round enjoyment, and the Crispy Noodles with Australian Lobster Meat, Ginger and Scallion, presented in a luxurious lobster broth-infused egg gravy, all delicately seasoned to accentuate the freshness of the ingredients.

Reflecting on his new position, Chef Leung states, “The Chairman’s Lounge offers a thrilling platform for my culinary creativity. My goal is to design dishes that not only delight the senses but also connect diners with the rich heritage of Chinese cooking traditions.”

A fervent believer in the Chinese culinary principle ‘se xiang wei ju quan’ (色香味俱全), Chef Leung stresses the significance of excellence in appearance, aroma, and flavor in dishes. He explains, “Our commitment to a menu that is both wholesome and visually appealing is essential. I follow a philosophy of eating well and joyfully, taking great pleasure in the happiness of our guests enjoying our food.”

As a dedicated father of three, Chef Leung finds immense joy in preparing meals for his family. This personal fulfillment extends to his professional life, where he is devoted to creating dishes that are as nutritious as they are enjoyable. He shares, “Crafting health-conscious dishes is more than a professional obligation; it’s a personal passion. It’s about nourishing both body and spirit, ensuring each meal is a fulfilling, joyful encounter.”
