Celebrate the Year of the Dragon at Pan Pacific Orchard with Chef Leung‘s exquisite cuisine in the new Chairman’s Lounge and festive menus.

Majestic and splendid, the Dragon, an emblem of honor and regal elegance in mythological tales, graces its presence at Pan Pacific Orchard, commemorating its first Year of the Dragon celebration since its inception in June 2023. Visitors are cordially invited to indulge in this momentous event with specially designed set menus and artisanal gourmet delights. Each dish is as indulgent as it is wholesome, encapsulating the essence of refined opulence that Pan Pacific Orchard is renowned for.

The highlight of this festive season is the introduction of an exclusive new private dining area, poised to become the gastronomic hub for Year of the Dragon festivities—The Chairman’s Lounge, under the stewardship of acclaimed chef Leung Wing Cheung. This intimate haven, accommodating a select 16 guests, features lavish elegance and a prestigious lounge, boasting a sweeping view of the Forest Terrace. The Chairman’s Lounge’s interior captivates with a 20-panel calligraphy masterpiece by the esteemed late Chua Ek Kay (1947-2008), a Cultural Medallion recipient and one of Singapore’s most celebrated artists. His work, “A Collection of Tang Poetry by Li Bai, Enjoying Wine and Conversation with Scholar Friends,” beautifully conveys 17 poems with themes of feasting, social gatherings, and enjoyment, adding a layer of artistic depth and poetic sophistication to each dining experience in this private setting.

The Chairman’s Lounge becomes the ideal backdrop for the gastronomic wonders of the newly-appointed Chinese Master Chef Leung Wing Cheung. Previously the Executive Chef at Si Chuan Dou Hua, a high-end Chinese restaurant within the Pan Pacific Hotels Group, Chef Leung, a Guangdong native with over four decades of culinary experience in Hong Kong and Singapore, is celebrated for his skill in enhancing natural flavors with minimal seasoning, a hallmark of Cantonese cuisine. Utilizing top-tier ingredients, from Australian lobster to wild giant Soon Hock fish, and from birds’ nest to matsutake mushrooms, he creates visually stunning dishes rich in complex flavors and balanced textures, showcasing his culinary expertise and devotion to excellence.

For the Year of the Dragon, Chef Leung has crafted a series of festive menus for The Chairman’s Lounge, available from January 22 to February 24, 2024. These include the Delightful set menu, priced at $2,688++ per table of 10, featuring a range of tantalizing dishes. For a more luxurious experience, the Prosperity and Eternity set menus are offered at $2,988++ and $3,288++ per table of 10, respectively. Each menu transcends mere taste, offering nourishment and well-being as guests step into the new year’s splendor.

A standout dish is the Prosperity Exotic Garden Yusheng, featuring lobster, symbolically linked to the “dragon-prawn” in Mandarin. This unique yusheng includes over 20 fresh vegetables and fruits, complemented by whisky-infused sea cucumber, pistachio, dried pineapple, and other novel ingredients. The osmanthus sauce, meticulously prepared by Chef Leung, pairs with a distinctive black truffle sauce enriched with Japanese matsutake mushrooms, crowned with freshly poached lobster.

Other luxurious creations include Crispy Noodles with Australian Lobster, Pan-Seared Dried Oyster With Duet Of Traditional Crispy Chicken, and a range of Cantonese Double-Boiled Supreme Soups. Chef Leung also offers health-conscious options, like Poached Five-Grain Rice with Lobster and a dessert of Double-Boiled Bird’s Nest With Rock Sugar In Mini Pumpkin, alongside a thoughtfully curated vegetarian set menu.

For those preferring to celebrate at home, Chef Leung’s signature Prosperity Exotic Garden Yusheng and a Grand Fortune “Pen Cai” are available for takeaway. The hotel also offers a variety of elegantly packaged sweets, including Ingot-shaped Nian Gao with Soya Bean Crisps and Golden Kumquat Coins.

To elevate Lunar New Year celebrations, Pan Pacific Orchard offers curated banquet packages. The Claymore Ballroom and the Scott’s Room, available from January 22 to February 24, 2024, offer a minimum spend of $30,000 and $7,000, respectively. These packages include communal Chinese set menus, soft drinks, Chinese tea, and other thoughtful additions, ensuring a memorable and festive Lunar New Year experience.
