China Airlines introduces authentic Taiwanese flavors in partnership with MIPON

China Airlines, the Taiwan-based carrier, has elevated its in-flight dining experience by partnering with MIPON, the Michelin one-star restaurant at the Grand Mayfull Hotel Taipei, to introduce “Starred Taiwanese Cuisine on the Clouds.” This collaboration aims to bring the essence of classic Taiwanese dishes to the skies. Starting April 1, passengers across all classes on regional routes departing from Taiwan, including Southeast Asia, cross-Strait, and selected Japanese and Korean routes, will have the opportunity to savor authentic Taiwanese flavors curated by MIPON exclusively for China Airlines.

Kao Shing-Hwang, President of China Airlines, expressed the airline’s commitment to providing passengers with the utmost flying experience by joining forces with renowned culinary experts across various routes. The cuisine developed by MIPON for China Airlines emphasizes the use of local, seasonal ingredients, aligning with the airline’s ethos of sustainability and environmental protection. These efforts reflect China Airlines’ continuous dedication to enhancing the quality and diversity of its in-flight dining offerings, ensuring that every journey feels like a warm homecoming for travelers.

Rice holds a significant place in Taiwanese culinary heritage, and MIPON’s Head Chef Chen Yong-Hua skillfully employs traditional cooking techniques to revive beloved Taiwanese flavors and showcase the elegance of Taiwanese cuisine. By infusing Eurasian cooking methods, MIPON has earned one Michelin star for three consecutive years, showcasing a vibrant spectrum of Taiwanese culinary delights. The collaboration with China Airlines has resulted in a selection of 15 dishes across all classes, carefully crafted based on MIPON’s popular offerings and adjusted for optimal enjoyment in-flight.

The menu for “Star-rated Taiwanese Cuisine on the Clouds” in Business and Premium Business Class will showcase delicious offerings such as “Plum Sauce Abalone and Sous-vide Chicken Breast Salad” for the appetizer and “Mullet Roe Rice with Pan-fried Prawn” as the main dish. The exquisite plum sauce complements the combination of abalone and chicken, while the main course highlights the authentic flavors of Taiwan with wild mullet roe and pan-fried shrimp. Other rotating dishes include “Seafood Salad with Truffle Sauce,” “Cherry Valley Duck and Scallop Salad with Mustard Sauce,” “MIPON Signature Dish Stir-fried Chicken with Three-Cup Sauce / Julienne Sweet Potato Rice,” and “Braised Beef Flank and Tomato with Quinoa Rice.”

The Premium Economy Class will also feature enticing options like “House Salad with Plum Sauce” and “MIPON Stir-fried Pork Neck Meat with Sesame Oil, Plain Rice,” while Economy Class passengers can relish dishes such as “MIPON Stir-fried Chicken with Sweet and Sour Sauce / Plain Rice.” These dishes showcase the richness of Taiwanese cuisine, offering a delightful culinary journey for passengers in the sky.

China Airlines’ dedication to enhancing in-flight dining extends beyond its collaboration with MIPON. The airline has partnered with other top restaurants like Yangming Spring, Les Palais, and Toutouan to offer a diverse range of culinary experiences. Additionally, collaborations with dessert makers, tea brands, and baking champions further enrich the onboard dining experience, ensuring that passengers enjoy a wide array of exquisite treats during their travels.
