Diya, the signature Indian restaurant, has collaborated with Chef Rajni to present an authentic culinary experience from Kashmiri Pandit Cuisine for over two weeks.


The special menu is curated by home chef Rajni Jinsi, a homemaker hailing from Anantnag, who acquired the art of cooking from her mother. Chef Rajni’s cooking and dishes hold a special place in her heart, and she is eager to showcase traditional Kashmiri Pandit cuisine delicacies.


While the beauty of Kashmir is widely celebrated, the true essence of Kashmiri cuisine often remains a mystery to many. Indulge in the most delectable dishes from the valley and embark on a unique culinary journey with Kashmiri delights. Explore the rich flavors of Kashmiri Pandit cuisine at Diya, The Leela Ambience Gurugram Hotel & Residences. Characterized by spices like saffron, fennel, and asafetida, and featuring dairy delights such as curd and ghee, this cuisine avoids onions and garlic, opting for hing (asafetida) for flavor. Traditional ingredients include lotus stem, turnip, dried fruits like apricots, and figs.

Signature dishes like Dum Aloo and Nadur Yakhni showcase the cuisine’s emphasis on saffron, offering a vibrant and aromatic experience.
