Four Seasons Vail debuts exclusive winter wine series featuring renowned wineries

Four Seasons Resort Vail is excited to unveil its inaugural Winter Wine Series at Flame Restaurant, featuring an exclusive collaboration with world-renowned winemakers. The event kicks off with a “Meet The Vintner” dinner featuring Pinea Winery on December 23, 2023. This is followed by a series of dinners showcasing Daou Family Estates on January 19, 2024, Fisher Vineyards on March 1, 2024, and concluding with Silver Oak Cellars on March 17, 2024.

Ellis Murphy, the Assistant Director of Food & Beverage at Four Seasons Resort and Residences Vail, expressed enthusiasm about introducing these prestigious wineries to Vail. The series is aligned with the introduction of Flame’s new menu, rich in international flavors, designed to pair exquisitely with the wines. This Winter Wine Series is a unique platform to present extraordinary vintages from Spain and California, offering insights into each estate’s history, terrain, and winemaking practices.

Coinciding with this series is the launch of Flame Restaurant’s new menu, inspired by global culinary influences while honoring its Rocky Mountain heritage. The menu features a fusion of bold Latin flavors and premium Colorado produce, with standout dishes like Sinaloa Spicy Aguachile, Portuguese Bacalao Potato Cakes, and the “Après Pow for Two” Chipotle and Miso Baked Alaskan Cod.

Simon Purvis, the Executive Chef at Flame Restaurant, mentioned the team’s eagerness to elevate their culinary artistry in this setting. Special multi-course menus are being finalized to harmoniously match the distinctive character of each wine, celebrating local ingredients and the gastronomic traditions of the wine-producing regions.

Reservations for these exclusive wine dinners can be made for USD 300 per person through Flame Restaurant on OpenTable.

Pinea Winery, established by Hugo Del Pozzo and Vicente Pliego, is dedicated to crafting some of the world’s finest wines. The winery, spanning 85 acres near Olmedillo de Roa in Spain’s Ribera del Duero region, employs organic and sustainable practices to cultivate grapes that reflect the unique terroir.

DAOU Family Estates, a family-run winery, aspires to produce world-class wines that rival prestigious appellations. Located in Paso Robles’ Adelaida District, DAOU’s estate is celebrated for its unique geology and high elevation, producing Bordeaux style wines with a blend of Old World and New World methods.

Fisher Vineyards, led by the Fisher family since 1973, is renowned for its estate-grown wines from Napa and Sonoma. The winery’s legacy includes collaboration with some of California’s most respected wine talents, offering a range of limited-production wines annually.

Silver Oak Cellars, a family-operated winery for over 50 years, specializes in cabernets aged in American oak. Founded by Ray Duncan and Justin Meyer, and now managed by Ray’s sons, the winery is dedicated to sustainable viticulture and produces wines perfect for immediate enjoyment or long-term aging. They also own OVID Napa Valley and founded Twomey Cellars and Timeless Napa Valley.
