Taj Palace, New Delhi, the distinguished symbol of the capital, recently hosted a captivating evening blending glamour, fashion, cuisine, and craftsmanship at its renowned Indian restaurant, Loya, in collaboration with Satya Paul. This event, part of Loya’s signature series known as Loya Qissa, unfolded amidst the presence of the city’s elite.

A standout feature of the Loya Qissa was the enchanting fashion show by Satya Paul. Set against the backdrop of the immersive restaurant, the unique runway presentation showcased the “In Rainbows” collection, transporting the audience to blooming fields and fantastical rainbows. This collection ingeniously pushed the boundaries of traditional garments, especially the saree, with prints inspired by a diverse range of elements, from wildflowers to majestic peacocks. The psychedelic palettes were intentionally vibrant, adorning everything from cozy quilted jackets to evening dresses designed for those juggling multiple social engagements. The power of print remained a classic hallmark of Satya Paul’s artistic expression.

Nayan Seth, the General Manager of Taj Palace, New Delhi, expressed gratitude to the guests and patrons, acknowledging their love and support for Loya over the past year. Reflecting on the restaurant’s achievements, from being the only one in the country with its music album to breaking conventions with a fashion show within the restaurant premises in collaboration with Satya Paul, Seth emphasized the commitment to pioneering immersive experiences, unique culinary concepts, and experiential lifestyle events.

The evening marked the debut of Loya’s new cocktail program, S.P.I.C.E., seamlessly blending music, food, and beverage into a multi-sensorial experience. Crafted by the dynamic team of mixologists, the collection of ten unique cocktails featured indigenous ingredients from the North, such as galgal and turmeric, inspired by S.P.I.C.E.’s pillars: Scale, Pitch, Instrumentation, Chords, and Expression. Notable concoctions like Whis-Gal, Haldi, Highway 44, and Loya Mary garnered praise from the attending guests.

Launched the previous year, Loya continues to take diners on a gastronomic journey through the vibrant North, encompassing the Himalayan foothills, Punjab’s terrains, Kashmir’s snow-capped peaks, and beyond. The menu resurrects forgotten culinary traditions, presenting authentic recipes with heirloom ingredients. The spotlight is on age-old cooking techniques like dungaar (smoking and slow-cooking), the aromatic art of “baghar” (tempering spices in hot oil), sigdi (cooking over an open fire), and the traditional method of pounding masalas with a sil-batta (pestle and mortar).
