Four Seasons Resort and Residences Los Cabos at Costa Palmas has introduced its latest dining experience, Zest, marking the resort’s 13th culinary venture. Zest stands out as Baja’s most intimate fine-dining venue, featuring a single table that seats up to twelve guests and presents a nine-course seasonal tasting menu crafted by Executive Chef Fabio Quarta.
Nestled just beyond the lemon groves that frame Limón, a renowned restaurant at the resort, Zest finds its home in Chef Fabio’s private garden. Diners will enjoy their meal under the night sky at a singular table, surrounded by lush passion fruit vines. The nine-course dinner highlights seasonal ingredients directly sourced from the garden.
Hailing from Puglia, Italy, Chef Fabio’s culinary journey has spanned Europe, the Middle East, Africa, and ultimately, the East Cape of Baja. This region’s seafood-rich, fresh, and seasonal cuisine mirrors the flavors Chef Fabio cherished in his youth.
Zest celebrates these culinary parallels, blending the purity of fresh, exquisite ingredients with techniques and flavors inspired by both Italy and Baja.
