Early next year, Wynn Las Vegas will unveil Fiola Mare, a Mediterranean seafood restaurant by acclaimed chef and restaurateur Fabio Trabocchi. Known for his award-winning establishments in the mid-Atlantic and South Florida, Chef Trabocchi is set to introduce one of his most cherished concepts to Las Vegas.
“Since moving to the U.S. in 2000 from Le Marche, Italy, I’ve dreamt of having a restaurant in Las Vegas,” said Chef Fabio Trabocchi. “Partnering with an iconic destination like Wynn Las Vegas is a perfect complement to our hospitality group.”

Menu and Dining Experience
Fiola Mare’s menu will showcase a variety of seafood sourced from the Mediterranean and the U.S. coasts. Similar to its sister restaurant in Washington, D.C., the Las Vegas location will feature a raw bar, seafood towers, tableside services, and elegantly grilled seafood entrees. The Carrello del Pesce, a seafood cart, will offer daily catch options.
The culinary offerings will be complemented by crafted cocktails and a wine program celebrating global producers, including a vast collection of European choices.

Fiola Mare will feature opulent finishes and maritime-inspired design elements, with custom furnishings influenced by French and Italian designs from the 1940s and 1950s. The dynamic floor plan will maximize views of the resort’s Lake of Dreams.

Fiola Mare will replace Lakeside, which will close in mid-July.
