Little Palm Island Resort & Spa, a distinguished member of the Noble House Hotels & Resorts portfolio, is excited to welcome Ali Monge as the new executive chef. With a celebrated career spanning over 16 years and adorned with numerous awards, Chef Monge is set to lead and manage the culinary endeavors at the resort’s acclaimed signature restaurant, The Dining Room.

Thomas Haas, vice president of food and beverage for Noble House Hotels & Resorts, conveyed his enthusiasm regarding Monge’s appointment, stating, “We are honored to welcome Chef Monge to Little Palm Island Resort & Spa as a culinary innovator whose skills of blending international flavors and methodologies will contribute a wealth of diverse expertise to The Dining Room. We can’t wait to see all the creative and delicious ways he incorporates fresh Keys seafood and ingredients into his menus.”

Throughout his career, Chef Monge has demonstrated a notable track record of culinary excellence, honed in leading resort and restaurant venues around the world. After earning his chef certification from the University of South Carolina, Monge began his journey as a lead cook in fine dining establishments, merging Southern Cuisine with French techniques. His expertise was further refined in prestigious settings such as the exclusive Four Seasons in Washington D.C.—the only Five-star, Five-diamond hotel in the nation’s capital—and the critically acclaimed MiniBar by José Andrés, a two Michelin star-rated venue where he blended Spanish cuisine with molecular gastronomy.

Before joining Little Palm Island, Monge excelled as the executive chef and head chef at Central Restaurante in Lima, Peru—an eatery recognized as the number one restaurant on Forbes’ 50 World’s Best Restaurants list—and El Cielo in Miami, a one Michelin star-rated restaurant, where he specialized in Latin American cuisine. Most recently, he contributed his culinary insights at Grupo RoasNegra in Mexico, supporting a wide array of restaurants and bars. Beyond the kitchen, Monge has interests in athletics, fishing, and music.

Little Palm Island Resort & Spa is a secluded paradise for U.S. presidents and celebrities alike, nestled on a four-acre private island with paths of crushed seashell set among lush tropical flora. Here, guests can encounter a rich array of wildlife, including birds, endangered Key Deer, iguanas, and dolphins. The resort offers 30 opulent thatched-roof suites with stunning ocean views and deluxe interiors.
