ONYX launches Nila: New Indian coastal cuisine experience at Amari Bangkok

ONYX Hospitality Group, a prominent player in the hospitality sector of Southeast Asia, is excited to introduce Nila, an elegant dining venue that celebrates the diverse and rich culinary traditions of India’s coastal and river port areas.

Nila made its debut on March 18th, occupying the fourth floor of Amari Bangkok, and offers a unique gastronomic adventure meticulously crafted by Chef Bharath S. Bhat, who is celebrated for his victory in the Thailand’s Iron Chef one-on-one chef battle. This new venture elevates Indian cuisine to new heights, marrying age-old recipes with modern twists for an unparalleled dining experience.

“NILA” is inspired by the Malayalam term for blue, reflecting the serene blue waters along India’s scenic coastline. The décor of the restaurant is influenced by the vivid colors of Portuguese architecture in Goa, a region on India’s southwest coast, and is enhanced with traditional Indian textures and imagery. This combination creates an atmosphere that evokes the rich history of maritime trade and cultural interchange.


At Nila, Chef Bharath presents a menu that draws inspiration from the centuries-old culinary history, featuring dishes that are a nod to the Portuguese influenced seafood from Goa and the Malabar coast, as well as to the European culinary influences found along India’s eastern coast. Every plate is carefully prepared to showcase the complex flavors and spices characteristic of India’s coastal gastronomy, aiming to delight the palates of even the most sophisticated food lovers.
