Tom Hamblet’s 2024 residencies with Exclusive Collection announced

Exclusive Collection is thrilled to announce that Tom Hamblet, the talented 24-year-old Sous Chef hailing from South Lodge in West Sussex, has emerged as the champion of the 16th edition of MasterChef: The Professionals. In celebration of his extraordinary achievement, Exclusive Collection is delighted to share the exciting news that Hamblet will be gracing two of its properties in 2024, taking on the role of Head Chef and curating menus inspired by his outstanding culinary creations from the competition.

The inaugural residency will commence at South Lodge’s renowned Camellia restaurant in West Sussex, running from January 3rd to March 31st. Following this, Hamblet will embark on his second residency at The Avenue at Lainston House in Winchester, from April 3rd to June 30th. During these exclusive residencies, patrons visiting South Lodge and Lainston House will have the privilege of immersing themselves in Hamblet’s culinary brilliance, with specially crafted three-course menus priced at £85. These menus will feature a selection of exquisite dishes inspired by Hamblet’s remarkable journey on MasterChef: The Professionals 2023.

Expanding the scope of these remarkable residencies, Exclusive Collection will introduce new Dine and Stay packages at each property. These packages provide an all-encompassing escape, allowing guests to savor Hamblet’s gastronomic creations while indulging in the luxurious accommodations provided by South Lodge and Lainston House.

Tom Hamblet’s residencies promise unforgettable gastronomic journeys, drawing inspiration from the challenges and triumphs he experienced on MasterChef: The Professionals 2023. Hamblet’s meticulously crafted three-course menu is a testament to his innovation, skill, and unwavering dedication to the culinary craft. Standout dishes to anticipate include:

  1. Wood Pigeon – Featuring wood pigeon accompanied by crispy onions, celeriac remoulade, celeriac puree, and a delectable pigeon and chocolate sauce.
  2. Roasted Scallop – Highlighting the roasted scallop complemented by Jerusalem artichoke puree, marigold oil, artichoke crisps, and a pastry tube filled with buttermilk and artichoke mousse.
  3. Curried Lobster – Showcasing lobster served with curried carrot puree, a ginger and chilli bisque, potato, mango, and caper salad, all brought together with a refreshing lime vinaigrette.
  4. Beef Fillet – Featuring succulent beef fillet partnered with oyster mushrooms, a lovage emulsion, pané oyster and salsify, and a side of braised beef cheek, accompanied by oyster and beef tartare.
  5. Chocolate and Peanut Mousse – Indulge in a delightful chocolate and peanut mousse with a feuilletine base, mascarpone Chantilly, nibbed peanut tuille, torched bananas, and a tantalizing miso caramel.
  6. Chocolate Tart – Conclude your culinary journey with a heavenly baked chocolate tart, complemented by blood orange and peppercorn pate de fruit, caramelized popcorn, an orange gel, and the exquisite tallicherry pepper ice cream.
