Four Seasons Hotel Hong Kong Celebrates Dragon Boat Festival with a New Foie Gras Dumpling from Lung King Keen

Every year, the Chinese embrace the culinary heritage of glutinous rice dumplings on Dragon Boat Festival, locally called Tuen Ng Festival. Through the years, while this humble delicacy has evolved with new renditions, Chinese restaurant Lung King Heen at Four Seasons Hotel Hong Kong continues to elevate its signature handmade glutinous rice dumplings with the finest ingredients and has become one of the most sought-after seasonal treats for discerning guests.

The three Michelin-starred establishment offers two rice dumpling gift sets in 2021 including a new savoury rice dumpling flavour.

Evolving Tradition

Lung King Heen offers two dumpling gift sets, each includes a 30-gram Iron Goddess Tea to aid digestion, and costs HKD 398:

Glutinous Rice Dumpling with Osmanthus and Chestnut (sweet)
Glutinous Rice Dumpling with Foie Gras, Conpoy and Termite Mushroom (savoury)
This is a set of mini sized sweet and savoury dumplings, weighing 300 gram each.

The foie gras, conpoy and termite mushroom dumpling is a new creation. Executive Chinese Chef Chan Yan Tak and his team pay tribute to the festival by giving it a French-meets-Chinese spin. In this mouth-watering recipe, they replaced pork fat with 30 grams of foie gras; the combination of the glutinous rice, egg yolk, conpoy and the termite mushroom with a spicy kick gives a comforting bite with full flavours.

The sweet dumpling is flavoured with osmanthus jam, a twist to the traditional taste, and costs HKD 468.

Organic Glutinous Grain Rice Dumpling with Abalone and Conpoy
This mega-sized dumpling is good to share for up to four people. Apart from the staple of pork, Chinese mushroom and salted egg yolk that are found in the usual dumpling, this luxury version includes a 17-head South African abalone, roasted pork belly and roast goose, promising an abundance of Cantonese delight. Another highlight is the use of organic ten grain rice that adds more fibre and nourishment to this treat.

All rice dumplings from Lung King Heen are boiled for at least four hours and simmered in hot water for 12 hours to achieve that sticky and chewy texture from mung beans and glutinous rice.

Lung King Heen rice dumplings can be purchased from the eShop of Four Seasons Hotel Hong Kong. Guests can enjoy 15 percent early bird savings for purchases made from May 1 to 21, 2021, and dumplings are available for purchase until stocks last.

Rice dumplings can be collected at the Pop Up Pastry from June 7 to 13, 2021, between 12:00 noon and 8:00 pm daily.
