Nicolas Lambert Unveils a Symphony of Summer Flavours in New Afternoon Tea at Four Seasons Resort Dubai

Four Seasons Resort Dubai at Jumeirah Beach introduces a captivating summer experience with the launch of the exquisite new Afternoon Tea at Shai Salon. Drawing inspiration from the idyllic summers spent in the South of France, Nicolas Lambert, Senior Executive Pastry Chef at Four Seasons Hotels Dubai, has crafted a menu that beautifully captures the essence of the season, transporting guests to a world of fruity flavours, aromatic herbs, and exotic accents.

Reflecting on his cherished childhood memories, Chef Lambert shares, “In my home, les Vosges, we had four cherry trees. When the cherry season arrived, together with my brother, we would climb to the top of the trees and eat cherries like bottomless pits, leaving nothing but a sea of empty cherry stems behind us.” These nostalgic moments have inspired a summer afternoon tea concept that is summery, light, and brimming with Mediterranean flavours.

The main highlight of the summer afternoon tea is its emphasis on freshness and fruitiness, with a delectable array of treats featuring ingredients sourced mainly from the Mediterranean region. Lambert’s summer repertoire includes exquisite creations such as the Raspberry and Tarragon Tart, where aromatic herbs lend an enticing aroma and spice; and the Pistachio and Yuzu Flower, offering an Arabic and Asian twist that blends buttery pistachios, with freshness, and acidity of the yuzu.

Pastry enthusiasts will be captivated by the Coconut and Pineapple, a silky confection made of vibrant pineapple marmalade with lime that adds a burst of zest, perfectly complemented by dark chocolate from Madagascar. For those seeking a taste of the South of France, the Strawberry and Vanilla Lifebuoy presents a tantalizing combination of fresh strawberries, almond, and schar bread.

Chef Lambert’s passion for culinary creativity is further showcased in the Rosemary Brioche Feuilletée, which pays homage to the markets of Cannes. Inspired by the tradition of receiving fresh herbs with fruit purchases, Lambert ingeniously blends rosemary with apricot to create a delightful pie. Adding a touch of classic elegance, the Almond Cookie with tonka beans and cherry tantalizes the taste buds with its delicate balance of biscuit and vanilla flavours.

The divine Beignet with hazelnut and Sicilian lemon delivers irresistible delicacy, during which a burst of flavour is ignited, and a sense of adventure fulfilled. And for a touch of English tradition, the freshly baked scones are now elegantly served on the table, with clotted cream and seasonal fruit preserves from local producers.

Completing the culinary journey, Shai Salon presents a selection of savoury bites that harmonize with the sweet creations. Guests can uncover delectable Smoked Salmon Mousse, Smoked Chicken Tartlet with Sundried Tomato Cream Cheese, Orange Zest, and Kumquat; Cucumber Pinwheel with Cream Cheese, Cheddar, and Avocado Cream; and the ever-sophisticated Truffle Egg Mayonnaise.
