China’s luxury hospitality landscape has been enhanced with the introduction of Illusion, an innovative cocktail menu presented at Four Seasons Hotel Hong Kong. Created by Caprice Bar, the collection has been designed to transform the traditions of fine wine into a modern cocktail experience, combining creative mixology techniques with the aromas, textures and memories associated with prestigious wine varieties.
The new menu has been positioned as a distinctive addition to the hotel’s beverage offering, inviting guests to explore familiar wine characteristics through an unexpected format. Instead of presenting traditional bottles, Caprice Bar has created nine cocktails that recreate the essence of celebrated wines while using carefully selected spirits, infusions and ingredients.
The concept has been developed as a continuation of the identity shared between Caprice Bar and the neighbouring three-Michelin-starred French restaurant Caprice, which is recognised for its respected wine programme. Through Illusion, the connection with wine culture has been maintained while a new perspective has been introduced through contemporary cocktail craftsmanship.
Several creations have been presented in wine-bottle formats with specially designed labels inspired by renowned wine regions. The experience has been structured around discovery, with guests encouraged to select a bottle and uncover the cocktail hidden inside.

Luxury Mixology Inspired by the World of Fine Wine
The Illusion menu has been carefully arranged in the style of a traditional wine list. The journey begins with white wine-inspired cocktails before progressing towards red wine interpretations and concluding with dessert wine creations.
Rather than following traditional wine regions, the cocktails have been named after locations across Hong Kong, including Sai Ying Pun, Sheung Wan, Tin Hau, Lamma Island, Mid-Levels, Happy Valley, Lantau Island and Victoria Peak. This approach reflects the local connection of the menu while maintaining its international wine-inspired foundation.

The Sai Ying Pun cocktail has been inspired by Blanc de Blancs Champagne and has been created to reflect the purity and freshness associated with Chardonnay-based sparkling wines. Mango-infused gin, cream shochu and carbonation have been combined to recreate tropical flavours, smooth texture and the delicate sensation of fine bubbles.
The Sheung Wan creation has been influenced by grand white Burgundy wines from Côte de Beaune. A roasted-butter fat-washed vodka base has been used to replicate the creamy character associated with oak-aged Chardonnay, while verjus and saline solution have contributed acidity and minerality.
Tin Hau has been crafted around the aromatic qualities of Northern Rhône Viognier. Peach-infused pisco, elderflower liqueur and celery elements have been brought together to create a floral and refreshing cocktail experience.
The Lamma Island cocktail has been inspired by Pinot Noir, capturing the delicate balance of red fruit and earthy notes associated with the variety. Gin, raspberry, beetroot and cherry elements have been combined to create a layered interpretation of the elegant wine style.

The red wine section of the Illusion menu continues the exploration of wine-inspired flavours through advanced mixology. The Mid-Levels cocktail has been created as an interpretation of Rhône Valley reds, combining tequila and mezcal with griotte cherry, thyme and black olive. The drink has been extended into a highball format using olive-based tonic, delivering fruit, mineral and savoury characteristics.
The signature Caprice Bar cocktail has been inspired by a First Growth Bordeaux, one of the most prestigious wine categories. A Negroni foundation has been enhanced with cocoa-butter-washed cognac, Mancino Chinato and crème de cassis to recreate the depth, richness and blackcurrant notes associated with Bordeaux wines.

The Happy Valley cocktail has been designed around the distinctive character of Vin Jaune from Jura. The drink has reinterpreted an Old Fashioned format by combining bourbon with Vin Jaune and absinthe, resulting in a complex profile featuring saline and toasted walnut notes.
The Lantau Island creation has provided a lighter interpretation of fortified Port wine. Plum-infused Campari and house-made carbonated guava water have been combined to create a bright, tropical cocktail while remaining the lowest-alcohol option within the collection.

The final creation, Victoria Peak, has been inspired by Sauternes, the renowned sweet wine style associated with richness and elegance. Presented in a three-litre bottle format, the cocktail has been designed to deliver a dramatic conclusion to the Illusion experience.
The drink combines Sauternes sweetness with the bitterness of a Negroni-style cocktail, creating a balance between dessert wine influences and classic mixology. Candied orange flavours, saffron decoration and an apricot-and-saffron chocolate pairing created by Hong Kong-based Conspiracy Chocolate have completed the presentation.
